Homemade Colorful Marshmallows
Soft, fluffy, colorful marshmallows are one of those homemade treats that look much more complicated than they actually are.
They’re light, pillowy, sweet, and perfect for birthday parties, holidays, hot chocolate, dessert boards, or simply making something fun with the family.
The best part is that you can choose your own colors and flavors, so every batch can look completely different.
Ingredients
- 3 tablespoons unflavored gelatin
- ½ cup cold water
- 1½ cups granulated sugar
- ½ cup water
- 1 teaspoon vanilla extract
- A pinch of salt
- Food coloring of your choice
- ½ cup powdered sugar
- ½ cup cornstarch
For extra flavor, you can replace some or all of the vanilla with strawberry, raspberry, lemon, or orange extract.
How to Make Homemade Marshmallows
1. Prepare the Pan
Lightly grease an 8-inch square baking pan.
Line it with parchment paper, leaving some paper hanging over the sides so you can easily lift the marshmallow mixture out later.
Dust the bottom generously with a mixture of powdered sugar and cornstarch.
This prevents the marshmallow from sticking.
2. Bloom the Gelatin
Place the cold water in a large mixing bowl and sprinkle the gelatin evenly over it.
Let it sit for about 5–10 minutes.
The gelatin will absorb the water and become soft.
3. Prepare the Sugar Syrup
Place the granulated sugar and remaining water in a saucepan.
Heat over medium heat, stirring until the sugar dissolves.
Once the mixture begins boiling, avoid stirring and continue cooking until it reaches approximately 240°F (115°C) on a candy thermometer.
Be very careful because the syrup will be extremely hot.
4. Whip Everything Together
Slowly pour the hot sugar syrup into the bloomed gelatin while mixing on low speed.
Gradually increase the speed and continue beating for several minutes.
The mixture will become thick, white, glossy, and fluffy.
Add the vanilla and a pinch of salt.
Continue beating until the mixture becomes thick enough to hold its shape.
5. Add the Colors
This is where the marshmallows become especially fun.
Divide the mixture into several bowls.
Add a small amount of food coloring to each bowl.
For example, you can make:
- Pink
- Blue
- Yellow
- Green
- Purple
Use only a little coloring at first. You can always add more.
For a rainbow effect, gently swirl different colored mixtures together instead of completely combining them.
6. Transfer to the Pan
Quickly spread the colored marshmallow mixture into the prepared pan.
Smooth the surface with a lightly greased spatula.
Dust the top with more powdered sugar and cornstarch.
Leave the marshmallows at room temperature for several hours, preferably overnight, until completely set.
7. Cut Into Squares
Once firm, lift the marshmallow slab from the pan using the parchment paper.
Dust your knife with the powdered sugar-cornstarch mixture and cut the marshmallow into squares.
Coat the freshly cut sides with more of the mixture so they don’t stick together.
Tips for Perfect Marshmallows
Work quickly: Once the marshmallow mixture is whipped, it begins setting fairly quickly.
Don’t skip the coating: Powdered sugar and cornstarch keep the marshmallows from sticking to the pan, knife, and each other.
Use gel food coloring sparingly: Too much liquid coloring can affect the consistency.
Be careful with the syrup: Hot sugar syrup can cause serious burns, so children should not handle this step.
Let them set properly: Cutting the marshmallows too early can result in a sticky, messy texture.
Fun Flavor Ideas
You don’t have to stop at vanilla.
Try combining colors and flavors for different occasions:
Pink + strawberry: Perfect for Valentine’s Day or birthdays.
Blue + vanilla: A fun choice for winter parties.
Yellow + lemon: Bright, fresh, and slightly tangy.
Purple + berry: Great for colorful dessert tables.
Green + mint: A festive option for Christmas.
How to Store Homemade Marshmallows
Keep the finished marshmallows in an airtight container at room temperature.
Separate layers with parchment paper if necessary.
They are best enjoyed while they’re soft and fluffy.
Avoid storing them in the refrigerator unless your particular recipe requires it, as refrigeration can affect their texture.
A Fun Homemade Treat
Homemade colorful marshmallows are surprisingly simple once you understand the basic technique.
They make an ordinary dessert table look festive, and the colors can be customized for almost any celebration.
Serve them on their own, add them to hot chocolate, use them to decorate desserts, or package a few in small bags as homemade gifts.
Soft, colorful, and wonderfully fluffy, these marshmallows are a sweet little project that’s as fun to make as it is to eat.
