For the Chicken
- 4 boneless, skinless chicken breasts or 6 chicken thighs
- 1 teaspoon salt
- ½ teaspoon black pepper

- ½ teaspoon dried rosemary
- 1 teaspoon paprika
- 1 medium onion, sliced
- 3 cloves garlic, minced

- 5–6 large carrots, peeled and sliced
- 2 tablespoons butter
- 1 tablespoon honey or brown sugar, optional
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 1 tablespoon chopped fresh parsley
Instructions
1. Season the Chicken
Pat the chicken dry with paper towels. Season both sides with salt, pepper, garlic powder, thyme, parsley, rosemary, and paprika.
2. Add the Vegetables
Place the sliced onion and minced garlic in the bottom of your crockpot. Arrange the seasoned chicken on top.
3. Add the Broth and Butter
Pour the chicken broth around the chicken. Place the butter over the chicken and drizzle with olive oil.
4. Slow Cook
Cover and cook on LOW for 4–6 hours or until the chicken reaches an internal temperature of 165°F (74°C). Avoid overcooking, especially if using chicken breasts.
5. Prepare the Carrots
While the chicken cooks, place the sliced carrots in a saucepan with enough water to cover them. Simmer for about 8–12 minutes, until tender but not mushy.
Drain well, then return the carrots to the warm pan. Add butter, salt, pepper, and honey or brown sugar if desired. Toss until the butter melts and coats the carrots.
6. Finish the Dinner
Remove the chicken from the crockpot and spoon some of the flavorful cooking juices over the top. Garnish with fresh parsley.
