Buttery Noodles and Tender Cabbage

Ingredients
- 8 oz (225 g) noodles or egg noodles
- 3 cups finely sliced cabbage
- 3 tablespoons butter
- 2 cloves garlic, minced
- 1 small onion, thinly sliced
- ½ teaspoon salt, or to taste
- ½ teaspoon black pepper
- ¼ teaspoon paprika
- 2 tablespoons grated Parmesan, optional
- 2 tablespoons chopped fresh parsley, optional
- 2–3 tablespoons reserved pasta water
Instructions
- Cook the noodles: Bring a pot of salted water to a boil. Cook the noodles according to the package directions until tender. Reserve a few tablespoons of the pasta water, then drain.
- Cook the cabbage: Melt 2 tablespoons of butter in a large skillet over medium heat. Add the sliced onion and cabbage. Cook for 7–10 minutes, stirring occasionally, until the cabbage becomes tender and slightly golden.
- Add garlic: Stir in the minced garlic and cook for about 30 seconds, just until fragrant.
- Combine: Add the cooked noodles to the skillet. Toss everything together with the remaining tablespoon of butter.
- Season: Add salt, black pepper, and paprika. Pour in a little reserved pasta water and toss until the noodles are glossy and nicely coated.
- Finish: Sprinkle with Parmesan and fresh parsley if desired.
Tips for Extra Flavor
For deeper flavor, allow the cabbage to brown slightly instead of stirring it constantly. You can also add a pinch of red pepper flakes for heat or a splash of soy sauce for a savory twist.
