These homemade pecan turtles are an irresistible combination of crunchy toasted pecans, soft buttery caramel, and rich chocolate. They look fancy enough for holidays and gifts, but they’re surprisingly simple to make at home.

- 2 cups pecan halves
- 1 cup soft caramels, unwrapped
- 2 tablespoons heavy cream
- 2 cups chocolate chips or chopped chocolate

Instructions
1. Toast the Pecans
Preheat your oven to 350°F (175°C). Spread the pecans on a baking sheet and toast for about 7–10 minutes, stirring once halfway through. Let them cool slightly.
2. Make the Pecan Clusters
Line a baking sheet with parchment paper. Arrange 4–5 pecan halves together in small clusters, leaving space between each one.
3. Prepare the Caramel
Place the caramels and heavy cream in a microwave-safe bowl. Heat in 20–30 second intervals, stirring after each interval, until completely smooth. Stir in the vanilla and a pinch of salt.
4. Add the Caramel
Spoon a small amount of warm caramel over the center of each pecan cluster. Allow it to spread naturally over the pecans.
5. Melt the Chocolate
Melt the chocolate chips in the microwave in 20-second intervals, stirring frequently until smooth. If desired, stir in the butter or coconut oil for a smoother coating.
6. Cover With Chocolate
Spoon melted chocolate over each caramel-and-pecan cluster, covering the caramel while allowing some pecans to remain visible.
7. Let Them Set
Place the tray in the refrigerator for 20–30 minutes, or until the chocolate is completely firm.
